- 700 grams Of Pork ribs
- 1/4 cup Olive oil
- 1 tsp Brown sugar
- 1 tsp Paprika

- 1 tsp Basil leaves
- 1/2 Brown onion finely chopped
- 2 Garlic cloves finely chopped

- 250 ml Rice vinegar
- 1 tsp Ground cinnamon
- 1 tsp Chili pepper powder
- 2 tbsp Mustard or Mustard powder
- 1 tsp Cumin
- 1 tsp Paprika
- 1 tsp Salt
- 2 tbsp Prego pasta Tomatoe sauce with onion and garlic
- 125 ml Bourbon or Rum
- 1 Onion finely chopped
- 1 Tomatoe finely chopped
- 2 Bay leaves
- 1 Jalapeño Chilli finely chopped (If desired)
- 1 small orange rind (only the orange part, no white part)
Instructions to make to make Marinated Braised Pork Ribs
- Put ribs aside, and put all the ingredients for the marinating sauce in a pot, big enough to fit the ribs.
- Mix all the ingredients well, then put the ribs inside the pot and rub the marinating sauce with your hands to the ribs. Make sure they are well rubbed with the sauce. Put the ribs into the fridge for one hour or two.
- After Marinating the ribs, preheat the oven at 180º for 5 mins. Put the ribs inside the oven with the fatty side up first, and cook them for 3 - 4 mins. Turn the ribs and cook them for another 3 - 4 mins or until sealed.
- Mix all the ingredients of the cooking sauce in a pan. Bring to the boil and simmer for 10 - 15 mins until you reach the desired thickness.
- Preheat the oven at 250º for 5 mins. Put the ribs in a big enough, non-sticky roasting pan (I putted baking paper on the pan). Pour the hot cooking sauce on the ribs.
- Cover the pan with foil and put into the oven for 1h 15 mins or until tender enough. You should turn them 2 - 3 times throughout. I didn't and they were still great, just a little smoked at the bottom.
